Green cuisine and the choice of cooking invasive species
The Italian speaker's presentation will focus on the definition of organic cuisine and the choice to use invasive species.
Due to the high number of invasive species and the environmental impact they have on the Venetian lagoon and its ecosystems, Chiara Pavan, committed to her environment, has chosen to incorporate these species into her menus, thus reducing their presence.
The Italian chef will be talking about this action, as well as others she has taken in pursuit of environmental sustainability - such as her own vegetable garden, fermentations, reuse and waste reduction - during her participation in FéminAs.
