In this talk, del Olmo proposes a gastronomic journey through Galician products, focusing on conservation and curing methods.
In August 2020, Ceibe (free) was born as a tribute to the traditional and modest Galician homes where everything revolved around the kitchen. Culture, tradition and territory are the pillars on which Lydia del Olmo bases her gastronomic philosophy.
