The fight against rural depopulation in Croatia, Portugal and Spain has found in the production of artisanal cheeses a way of revitalising the local economy, preserving traditions and creating new opportunities for communities.
Through the testimonies of a number of artisanal cheese producers, this round table will explore the opportunities offered by the production of an indigenous and quality product in the fight for the gastronomic positioning of rural areas affected by depopulation.
