Youth and irreverence at dinner
The dinner that closed the second day of FéminAs took place at the Regueiro restaurant in Villapedre (Navia). Another important gastronomic site in western Asturias.
Diego Fernández, Regueiro's alma mater, was joined in the kitchen by the Portuguese Rita Magro (Blind, Oporto) and Nacho Manzano, who came with the new generation of Casa Marcial**, his nephew Jesús Sánchez.
The four of them offered a dinner that was full of surprises. The host began with a series of starters served in the outdoor area of the restaurant. Diego offered a fusion of flavours with a beetroot meringue and manchego cheese cream; a partridge pie, banana chutney and black sesame; a tandoor chicken curry with naan bread; a beef, coconut and tamarind massaman curry; and a chicken and chipotle tinga quesadilla with fresh corn.
For her part, Rita Magro, named Portugal's best young chef in 2024 by the Michelin Guide, put into practice in the kitchen what she had explained on the FéminAs stage that morning: surprising flavours and textures with cuttlefish, green wine foam, parsley sauce; and sea bass with caldeirada and coriander.
At the table, the Asturian flavour was offered by Nacho and Jesús with cauliflower with almonds and smoked trout; and a Frisian cow, seaweed and bone marrow.
The dinner ended with a textured milk with jaba tonka and cocoa, with the house's signature Regueiro.
The typical Asturian cider, with a poma Áurea, and the wines from Corias accompanied and soaked up the evening.
