Chiara Pavan is a chef committed to sustainability through what she likes to call "environmental cuisine".

Since 2017, Chiara Pavan has been a chef at Ristorante Venissa, with chef Francesco Brutto, on the island of Mazzorbo in Venice's northern lagoon. Their cuisine focuses on reducing food waste and promoting the use of local and seasonal ingredients. There is no meat on the menu, only vegetables and fish, using invasive species that have had a major impact on the ecosystem of the lagoon and upper Adriatic in recent years.

Venissa Restaurant has been awarded a Michelin Star and a Michelin Green Star for sustainability. Cheffe Chiara, who was named Chef of the Year by L'Espresso in 2019 and International Chef by Elle Spain in the same year, received the Chef Donna award from Identità Golose in 2021. This year, she won the 'no food waste' award from Gambero Rosso and was named one of the 25 most influential chefs in Italy by Forbes Italia.
