Restaurant floor manager and sommelier at Yume (Avilés, Spain)
Iratxe is co-owner of Yume, and also its floor manager and sommelier.
Born in the Basque Country and an adopted daughter of Asturias, Iratxe started out helping her brother Koldo Miranda to set up and organise weddings and events at D’Miranda, where she discovered her passion for the floor and pampering customers. She gradually moved into this facet, and became the direct link between the kitchen and the restaurant floor. She was declared Best Floor Manager in The Best Digital Restaurants 2020. She has now undertaken her most personal and daring project alongside young chef Adrián San Julián at the Niemeyer Centre in Avilés.
An enthusiast for detail and good taste, another of her passions is decor, and she is directly responsible for this at Yume. And the liquid side of things, the cellar, is just another of her assets during the daily round.
She is constantly on the lookout for small producers and unknown products, while she spends her time and any relevant resources on training and learning to better herself and provide value for diners.
