Heading up Arrels, Vicky Sevilla is the youngest chef in Spain with a Michelin star.

Vicky got into cookery by sheer chance. In her teens she was unsure of what she wanted to do, and decided to go off to work in Formentera. It was there that fate decided she would work in the kitchen of a restaurant, and this decided her future. She then studied and worked with Susi Díaz (La Finca), Vicente Patiño (Saiti) and Begoña Rodríguez (La Salita).

Finally, aged only 25, she opened her own restaurant–Arrels-, located in the old Duques de Gaeta stables (16th century) in Sagunto. Her Mediterranean product cuisine with a hint of signature went on to delight locals and visitors until, at the age of 30 in 2023, Sevilla became the youngest chef in Spain to earn a Michelin star. She also has a Repsol "Sol" award.
