Delia Melgarejo
Restaurant floor manager and sommelier at Monte* (San Feliz, Lena, Asturias)
Delia Melgarejo makes up 50% of the soul of Monte, a rural sustainable project, 100% Asturias, where she manages the floor, and is also the restaurant's sommelier and director.
Originally from Paraguay, Delia moved to Barcelona with her family at the age of 9. She studied at the Bisbe Sivilla School in Calella (Barcelona), subsequently worked the floor at the Hotel Blancafort Spa Termal, and then moved on to the Hotel Miramar (Barcelona). She moved to Shanghai (China) to work at Jean George*, and then worked on Disney cruises until the pandemic broke out.
In 2020 she arrived at Monte Restaurante in the small village of San Feliz (Lena, Asturias), where she and chef Xune Andrade have produced a personal, intimate project in which the surroundings, culture and tradition serve as sources of inspiration for the restaurant each season. Delia runs the floor, and is also the sommelier and director of the restaurant, which in only three years has already earned a Michelin star and a Repsol "Sol" distinction.
