The first female president of the Spanish Federation of Associations of Chefs and Cakemakers (FACYRE) is a staunch supporter of produce and traditional cuisine.

Pepa was keen on cooking since she was a little girl. At the age of 9 she was washing squid and anchovies, and by the age of 11 she was already cooking alongside her father Pepe, whom she also accompanied to his catering events all over Spain.

Always restless and self-taught, and also a feature at leading gastronomy congresses and events both at home and abroad, in 2003 she started up her very own interpretation of gastronomy in what is now Qüenco de Pepa.

Pepa's main concern is to ascertain the origins of produce with a constant eye on sustainability, which means observing food seasons. Direct contact with farmers, wild mushroom gatherers, fishermen and livestock breeders facilitates this task, and so Qüenco de Pepa is known for its products. Not for nothing was her restaurant one of the first to have its own vegetable plantation in Madrid.
