He studied at the Escuela de Hostelería in Gijón. After graduating, he started working at the restaurant El Puerto with chef Miguel Arroyo. He also trained with Pedro Morán at Casa Gerardo and with the Manzano family at La Salgar in Gijón and Casa Marcial in Arriondas.
In October 2011, Diego Fernández began a new stage in his career by opening his own restaurant, Regueiro, in western Asturias.
In 2013, he won the Caldereta de Don Calixto award for young chefs in Asturias. In 2014, he was runner-up in the 'Revelation Chef' competition at Madrid Fusion. In 2015, he was awarded 'Best Iberian ham croquette in the world' at Madrid Fusion and 'Best Innovative Restaurant 2015' by the Asturian Critics Association. In 2016 he received the Sabores del Arco Atlántico award for best chef in Asturias.
