He had no vocation and did not follow the family tradition. He simply enrolled at the Escuela de Hostelería in Madrid because it was the only one that had places. There he began a career that led him to train alongside Paco Ron at La Taberna de Viavélez and to work in the kitchens of La Casa de la Ribrea (San Sebastián de Pravia), La Capilla de La Llorea, Doble Q de Quintueles and Café Gijón (Gijón).
Álex practises a cuisine that values the raw material in his restaurant El recetario, which opened in 2017. He previously ran another restaurant in Oviedo, Los Tres Caracoles.
